These are really good! Nice light and lemony. They were all in one piece when I got them. They don't seem to crumble as much as most GF cookies. Even my gluten eating boyfriend just loved them!

Wafer texture was very lifelike (i.e. like normal glutenous wafers), but tasted strongly like cardboard. Cream was very lemony, too lemony for my taste, like lemon rind.
