Gluten-free eating can be like navigating through a dietary minefield, because so many processed foods contain gluten, and so many food labels do not say whether gluten was used in their preparation. This is because most gluten-free foods are manufactured from small, family-operated companies, so that many people on the East Coast do not get much exposure to gluten-free foods produced on the West Coast, and vice versa. Further, many of the most recognized gluten-free manufacturers operate in Canada and Europe, limiting their presence in local health food stores in the United States.

Also, for those who shop on the Internet, many gluten-free sites do not accept online ordering or offer shipping options, which means that customers must either take the extra time to call or mail in their orders. In addition, many customers are disappointed that they have to pay extra shipping charges by placing independent orders with several different companies - they never know when their products will arrive and they pay shipping charges for each individual order.
