Authentic Foods (http://www.authenticfoods.com) Authentic Foods is a manufacturer of wheat-free and gluten-free flours, bakery mixes and natural flavors. We stone-mill ground our flours instead of hammer milling them to obtain the finest grind. We then package them in a wheat-free and gluten-free environment. All of our mixes will provide the taste, texture, and nutrition of wheat because of our proprietary high protein, high fiber Garfava Flour. It is blended from a combination of garbanzo beans (chickpeas) and fava (broad) beans. This specially blended Flour creates baked goods with excellent volume, good moisture content, improved dietary benefits and great taste without the use of gluten or wheat. This specially blended "Garfava Flour" was developed in 1992 by Steven Rice, the founder of Authentic Foods. Steven attended the University of Southern California where he earned his Bachelor of Science degree, Cum Laude; he has pursued graduate courses in biochemistry at California State University, Northridge. Additionally he has attended and instructed students at the Los Angeles Culinary Institute, and received a certificate from the International Food Technologists to design and implement Food Safety Programs called HACCP (Hazard Analysis Critical Control Point). Steve's career as an entrepreneur, began in 1978 when he planned and designed his own Fast Food Operations, Steve's Oasis. Authentic Foods, with a manufacturing facility in Gardena, California opened its doors in 1995. Authentic Foods bakery mixes have been sampled by celebrities, cookbook authors and the general public with similar comments of, "I can't believe it's made with Bean Flour, it taste just like wheat but better." Authentic Foods flours and mixes have received standing ovations from Bette Hagman, author of The Gluten Free Gourmet Cook Fast and Healthy, Jax Peter Lowell, author of Against the Grain, Carol Fenster Ph.D., author of Wheat-Free Recipes & Menus and Diet Solutions, Jim Burns, Food Editor and writer for Los Angeles Times Syndicate, Melinda Lee, cookbook author and hostess of various radio shows, Jackie Olden, cookbook author and hostess of numerous radio shows, and fifty two newspapers across the country. Pamela & Products (http://www.pamelasproducts.com) In 1941, Matthew and Amelia Giusto owned one of the first health food stores in San Francisco. Their shop, The Golden Crescent, launched a tradition of high quality natural foods for the Giusto family that is still going strong today - three generations later. Matthew and Amelia's sons, Al and Fred, worked everyday after school baking regular, as well as special allergy products in the small store's bakery. In time they took over the family business which had became Giusto's Specialty Foods. Giusto's is currently one of the San Francisco Bay Area's largest suppliers of natural and organic baking supplies and flours processed in their own mills. As a young girl, Pamela (Al's daughter) followed in her father's and uncle's footsteps by working at a variety of jobs in the family business and learned the industry from inside out. It was there that she realized the need for wheat-free cookies that not only tasted good, Pamela wanted cookies that tasted great! Her love for baked goods had never been satisfied by her family's allergy products and she felt it unfair for those who, faced with these or nothing, had no choice but to eat them. Pamela wondered if it were possible to make products that looked normal and tasted so delightful that everyone would like them (but no one would guess they were wheat-free). This was the inspiration behind Pamela's Products. In 1988, Pamela left the family business to launch her own natural foods line featuring wheat-free and gluten-free cookies, biscotti and baking mixes (some are also dairy-free, egg-free and vegan). Pamela's Products can now be found throughout North America and abroad. Today, Pamela remains the sole creator of her steadily growing gourmet line.
